The Salt Question — And Why It Matters More Than You Think

I want to take a moment to address something I know many of you have wondered: the product contains salt. For members who have been advised to reduce their sodium intake, that might give you pause. Let me use this as an opportunity to teach something important to me — something I’ve been sharing with members for decades — about the profound difference between salt versus sodium. Most of us are actually consuming too much sodium and not enough sodium chloride. These are not the same thing, and confusing them has led many of my members into Variety of health problems.

Not All Salt Is Created Equal

Let’s start with what’s on most kitchen tables and in most shakers at every restaurant in America: standard iodized table salt.

Here’s what goes into it:

  • Mined from underground deposits and refined at extremely high temperatures to produce nearly pure sodium chloride — stripped of virtually all trace minerals
  • Anti-caking agents added so it flows freely from a shaker — commonly sodium aluminosilicate, calcium silicate, or sodium ferrocyanide (yellow prussiate of soda)
  • Iodine added (as potassium iodide or sodium iodate) as a public health fortification — plus dextrose (corn sugar) to stabilize the iodine from decomposing
  • The result: nearly 99.5% pure sodium chloride with additives — a highly refined industrial product that shares little in common with unprocessed salt as it occurs in nature

Now compare that to unrefined sea salt or Himalayan pink salt: solar-evaporated or hand-mined, minimally processed, with 60 to 80+ trace minerals intact — magnesium, potassium, calcium, iron, zinc, and many more. These minerals are present in the same ratios found in ocean water, which is not coincidentally close to human blood plasma. No anti-caking agents. No added iodine. No dextrose. No added sodium. When food manufacturers add “sodium” to products, they’re often adding industrial sodium compounds that serve completely different purposes — preservation, texture, flavor enhancement, color fixation. The most common include: Sodium nitrate/nitrite, Monosodium glutamate, Sodium benzoate, Sodium phosphate, Sodium lauryl sulfate, Disodium EDTA, and Sodium saccharin. These are in cured meats, deli meats, hot dogs, Chinese food, chips, soups, sauces, sodas, condiments, juices, processed cheese, fast food, canned meats, baked goods, canned goods, dressings, diet foods and sweetened beverages, just to name a few!

These compounds bear almost no nutritional resemblance to sodium chloride. And yet when we eat in restaurants or consume processed foods daily — which most Americans do — we are accumulating sodium from dozens of these sources simultaneously, often without tasting anything particularly “salty.” And the American’s increase in heart disease and other metabolic disorders show it!

Here’s what makes this even more complicated: the body craves sodium for real physiological reasons. Sodium is critical for nerve firing, fluid balance, muscle contraction, adrenal function, and thyroid hormone synthesis. When sodium stores drop, the body responds by raising insulin levels which drives cravings for carbohydrates and — yes — salty foods through the roof! Many people on “low-sodium” diets find themselves irresistibly drawn to restaurant meals and packaged foods precisely because those foods contain the sodium they’ve restricted at home — but in forms loaded with additives.

Chloride: The Reason Salt Is Non-Negotiable for Digestion

Now let’s get to something I consider critically underappreciated — especially for our members over 50. I have watched this play out with real members over many years. Sodium chloride is not just a flavoring. The chloride component of salt is the raw material your stomach uses to manufacture hydrochloric acid. Gastric juice — the fluid your stomach produces to digest food properly — is primarily composed of hydrochloric acid (HCl), potassium chloride, and sodium chloride. The parietal cells lining your stomach pull chloride ions directly from the bloodstream to synthesize HCl. A Clinical Note on Age and Stomach Acid:

Hypochlorhydria becomes more common with age. Research shows approximately 5% of people over 60 and up to 12% of those over 80 have significantly reduced or absent gastric acid production. The causes are multiple — H. pylori infection, long-term use of proton pump inhibitors (PPIs) and antacids, aging of the parietal cells — but inadequate dietary chloride is a recognized contributing factor.

I have personally seen this pattern repeat with members who were placed on aggressive low-salt diets. They followed their doctor’s advice faithfully. They stopped adding any salt at home. But they continued eating restaurant meals, processed foods, and packaged items — getting plenty of sodium additives but not the chloride that comes from natural sodium chloride.
